With dates, dried fruit, and nuts you can make up a gluten-free energy bar packed with flavor.

You are free to play with the ratios, but dates is a must as it binds everything together and do not forget to add some dark chocolate chips, because according to me "What is an energy bar without chocolate". You could also add nutmeg, pumpkin seeds and cinnamon.
DATES & DRIED FRUITS ENERGY BARS
Ingredients
* 1 cup pitted dates , 1 cup almonds
* 1 cup dried raisins
* 1/4 cup dark chocolate chips
* 1 tbsp coconut shreds
Instructions
Mix all of the ingredients in a food processor or mixer blender . Run the mixer a few times so that all the ingredients breaks up. Blend continuously until the ingredients gather together into a ball.
Turn out the mixture onto a plastic wrap or piece of wax paper . Press into an even square and refrigerate. Cut into even sized bars and store in the fridge.
What? Wait? The only worry you will have is what to do with your extra time. Maybe go for a hike.
Sweet Potato Energy Bars
* 1 cup walnuts,almonds
* 1 1/4 cup dates (or a combo of raisins & dates)
* 1/2 cup oats
* 1/2 cup cooked & mashed sweet potato
* 1 tsp vanilla essence
* A dash of salt
Mix dates, nuts & oats in a mixer blender or food processor. Add mashed sweet potato, vanilla and salt and continue to blend until the mixture is well blended and pulls away from the sides.
Bake at 350 for 15-20 minutes after pouring mixture in a bread loaf pan with wax paper until done.
