Beetroot - 1 medium size

Carrot - 2 medium size

Ginger - 1"     small piece

Rock Salt/Salt - according to taste/honey or ground jaggery(according to taste)

Coriander/Mint/Lemon Wedges - For garnishing

Lemon Juice - 1-2 tbs

Water - As required


1. Wash and peel beetroot, carrot, ginger and chop into chunks.

2. In a mixer or blender add beets, carrot, ginger, salt and when the mixture become smooth puree add water as required.

3.  Strain the juice if you prefer and add lemon juice and water if needed.  Add a pinch of salt or ground jaggery/honey if you want it sweet.

Garnish with lemon wedges/Coriander leaves or Mint, serve chilled.  

Enjoy the drink when it is fresh. You can also add chaat masala/cumin powder if you are not adding honey or jaggery and it tastes good.
