CARROTS AND A LITTLE OIL

Cooking carrots in a little oil increases the level of the anti-oxidant beta-carotene as this is soluble in fat. A 2011 study found that our body can absorb 75% of the beta-carotene present in carrots when it is stir fried as compared to just 11% when consumed raw.

MUSHROOM AND CARROT STIR FRY

Ingredients

 

* 4-6 medium carrots thinly sliced

* 2 tablespoons butter, optional

* 2 teaspoons olive oil

* 1/4 kg or 250gms sliced mushrooms, drained

* 4 green onions with tops, thinly sliced

* 1 tablespoon lemon juice

* 1/2 teaspoon salt,

* 1/4 teaspoon pepper


Directions


In a medium heated fry pan, stir-fry carrots in butter if desired and oil for 5-7 minutes.

Add mushrooms and onions; cook and stir for 4-6 minutes or until vegetables are tender.

Stir in pepper, salt and lemon juice.

Serve hot.
