As we end our journey today in finding out the 12 best healthy and healing foods, we will also look into some scintillating recipes.



ORANGE PITH



Most of us know that oranges are a great source of Vitamin C but ensure that you eat as much of the pith-the spongy white layer between the zest and the pulp that holds on to the peeled orange. Although bitter the pith is rich in anti-oxidants and fibre. Always choose organic oranges if you are eating the pith or skin.



FRESH CRANBERRIES


Cranberries are well known for treating urinary tract infections but these tart little fruits prevent heart disease. They're rich in antocyanins, flavonoids and proanthocyanins,plant chemicals that keep LDL cholesterol from oxidising and sticking to artery walls.

How to eat them

Combine with banana, pineapple and orange for a fruit salad.Saute cranberries and serve them with meat.

 

INDIAN ROAST LAMB WITH CHILLIES

This absolutely divine extra special 48hr marinated, 6hr slow roasted leg of lamb, jsut melts in your mouth. A perfect delight for the foodie!


Ingredients

* 1.5 kg whole leg of lamb with deep cuts and fat removed
* 1 medium oven bag to marinade and oven cook
 

Marinade:

* 5 tbsp of yoghurt
* 1 lemon juiced
* 1 tsp of salt
* 1 tsp of sunflower oil
* 2 tbsp of ground cashews
* 2 tbsp of ground almonds
* 2 tsps methi masala
* 1 tsp garam masala

Garnish:

* 2 green chillies chopped
* 1 lemon - wedges
* coarsely chopped coriander
  

Method

Mix all the marinade ingredients and rub into meat, place in oven bag and marinate for 48hrs in the fridge.

Cook at 140C for 6hrs, rest for 30 minutes and

Garnish with chopped chillies and coriander with wedges of lemon

MIXED FIG & KIWI LEMON SALAD

You need:

 

* 2 cups fresh figs (washed & halved)

* 1 cup fresh blueberries

* 1/2 cup cut water melon cubes

* 1/2 cup sliced strawberries

* 2 tablespoons lime juice

* 2 cups torn lettuce leaves1

* small kiwifruit (cut into quarters)

* 2 tablespoons plain yogurt or sour cream

* 1 tablespoon honey


Directions: In a small bowl, toss all the fruits together: The figs, blueberries, melon, strawberries and 1 tablespoon of the lime juice. Since this makes about 4 servings, divide the lettuce leaves onto 4 plates, and spoon the fruit salad you made onto these 4 plates.Sprinkle the honey.
