Curry leaves are said to be very good for health and can be enjoyed for in a variety of recipes. Yes, these leaves have a distinctive aroma, good flavor and an enjoyable taste. They can be added to a number of cuisines and enjoyed and relished too, Curry leaves are a spice that can be made into powders and chutneys and enjoyed as an accompaniment to many savory dishes. They can be used as it is with rice and bread preparations also. Here are a few recipes that could help you savor these versatile leaves and get all the benefits of it. Yes, curry leaves are to be savored for their health benefits of digestion, prevention of kidney pain, premature graying of hair, hair loss, eye disorders, cataract, diarrhea, dysentery and nausea.

The ingredients you require are fresh curry leaves, oil to fry ingredients, broken black gram, hing, red chilies, mustard seeds, whole pepper, salt to taste and cooked not mushy rice. The quantity depends on the amount you want to prepare and your own personal taste. The method involves keeping the cooked rice aside. Then heat oil in a pan and fry the rest of the ingredients till the curry leaves turn crisp and the black gram turns golden brown. . Cool the mixture and grind it into a coarse powder. Mix with hot rice and ghee or oil (as per preference). Enjoy and relish this aromatic and full of taste preparation with roasted or fried pappad or chips. 

 

 

Here is something that you can prepare and keep aside for those lazy and sick days when you are in no mood to do cook, or want to enjoy a delicious aroma meal with that distinctive flavor. Yes, you are right. Just make Curry Leaves Powder and keep it for days to savor with anything you like.

 

 

The ingredients are about 2 cups of fresh curry leaves, 8-10 red chilies, 1 small lime sized tamarind pulp, 1 teaspoon hing, 2 teaspoons split black gram, 2 teaspoons split chickpeas, 1 teaspoon jaggery (if you like), 2 to 4 tablespoons oil to roasting, and salt to taste. Now start preparing that aromatic tasty powder of curry leaves by washing and rinsing the curry leaves which have been removed from the stalk. Keep aside for drying. Heat a wide pan and dry roast black gram and chickpeas till they are golden brown, adding hing at last and keep aside. Now add 2 to 3 teaspoons of oil in a pan and add curry leaves and roast on medium fire till crisp but still retaining it’s aromatic green color. Then add red chilies and roast for about a minute. Add tamarind and roast in another pan. When all the ingredients cool grind them well in a dry grinder to a fine or coarse powder depending on your preference.

 

Keep the curry leaf powder in a cool and dry place in a dry and clean container and relish it with steamed rice, chapattis, dosa, idly or even a pancake. Yes it is a real tongue-tinkling accompaniment with anything to enjoy.
