Diwali is the time of the year when all dieting plans go for a toss!This does'nt mean you ignore your health totally.Here is a traditional but wonderful recipe that aids digestion and keeps your tummy trouble free.Popularly known as Diwali legiyam or Diwali marundhu(medicine) it is rich in anti-oxidants,quickens digestion process and is oil free.The Diwali legiyam or paste is the first thing you have in Chennai before you have a mouthful of sweets or savouries in the morning.
NOW, FOR THE RECIPE...
Ingredients
Cumin-2tsp
Coriander seeds-4tsp
Ginger -1 small piece
Jaggery-250gms
Honey-2tsp
Ghee-1 tsp
Lemon extract-2tsp
Method
Roast coriander and cumin seeds in low flame for about 5 minutes and grind them till they become fine powder.
Peel the ginger and cut it into small pieces and add them to the cumin coriander powder and grind them to make a fine paste.
Pour a glass of water in a kadai and add the jaggery pieces.Boil till the pieces dissolve.Filter the mixture and boil again till it thickens.
Add the cumin coriander and ginger paste to the jaggery mixture and stir well.Add ghee and continue stirring till the paste thickens and becomes dark brown.
As soon as the paste stops sticking to the sides of the pan, remove the kadai from the flame.
Add honey and lemon extract to the legiyam while serving.
